What was your ‘watershed’ wine moment?
Working in hard core French wine teams as a sommelier for Sir Terrance Conran in London during the late 90’s.
How would you describe your wine collection?
After a year of stand down empty.
What is the most recent addition to your cellar?
The 2020 Ochota Barrels release. Incredibly emotional and profound wines for many sommeliers.
What are you enjoying drinking right now?
2011 reds. For a vintage that that promised so little, it’s butterflies from caterpillars.
What is the one piece of advice you would give to someone wanting to start their career in wine?
An increased focus on the customer sounds obvious but making wine accessible and relatable to the guest is not a skill that many sommeliers possess. When we go onto the floor it is never about us, it is about the people we serve. Most negative feedback about sommeliers, and the wine experience in restaurants, is still service.
