Sommeliers Australia members are invited to join our highly regarded COGS Managers (some may call them COGS Manipulators) Chris Crawford (Crown Melbourne) and Liam O’Brien (Cutler & Co.), and get an insight into how to make a beverage programme more profitable.

The session will cover everything from creating an interesting and profitable by-the-glass programme, costing a wine match, building a profitable cocktail list, beer COGS, looking at an overall beverage programme, and how to achieve your goals while ensuring value, originality, and integrity are not compromised.
