With experiences in the hospitality industry spanning over 30 years, David’s commitment and contribution to the NSW Committee and the National Executive Committee is very much valued.

He has left his footprints in London and New York, and also in some of the most iconic restaurants in Australia, including Banc, Rockpool and Est.  David co-created Lyre’s Non Alcoholic Spirits, a global leader in the Non-Alcoholic category, and currently works as it’s Vice Present and Global Flavour Architect.  He is also a partner and sommelier of the critically acclaimed restaurant, One Penny Red.

David is proud to see the wine industry become a legitimate career choice for the next generation, and is excited to impart his knowledge to those new to the industry.
