I am:
Sommelier at Bentley Restaurant & Bar, and The Wine Library.
What inspired me to become a sommelier:
Travelling through the world wine regions, discovering all cultural aspects related to food and wine, then being able to share these stories.
My favourite food and beverage match is:
Aged Manchego cheese from Spain, paired with Domaine Macle from Château Chalon in Jura, France. Both bringing complexity to each other, resulting in a harmonious yet powerful long finish.
If I could only take two things in a desert island, they would be:
Not sure how long I might be stuck there so let’s think big: A double magnum (still counts as one item right?) of 2009 Keller G-Max Riesling from Germany, and a bottle of Rum Depaz from Martinique, France (who knows I might even find some fruit there).
What I hope to get out of competing in the Best Sommelier of Australia 2020…
Have a good time, assessing my knowledge, meeting new people and learning as much as possible from them.
