What inspired me to become a sommelier:
The German Rieslings from Pfalz that were brought in by the chef Joachim Koerper in Lisbon at restaurant ‘Eleven’. Back then I thought only Portugal and France was making wine. Then I tried these Rieslings, that were so delicate, so intensely aromatic. Pedro, the GM made me try them with foie gras terrine and pumpkin compote… you can imagine what happened. From there I couldn’t stop reading, learning about them… then I discovered ‘Pesquera’, then ‘Screaming Eagle’… then Penfolds ‘Grange’… More than 12 years have passed and still discovering every day.
What I love about my profession:
To open the greatest bottles, with the greatest histories at their estate.
My favourite food and beverage match is:
Back home, we do sparkling Red Baga with suckling pig roasted on a wooden fire oven, believe me… it is very good.
What I hope to get out of competing in the Best Sommelier of Australia 2020…
I have tried a few times before to achieve first place, but it has never happened. Perhaps it could be this time!?
