A grape with Basque origins, Cabernet Franc is one of the stalwarts of the quintessential right-bank Bordeaux style. In a blend, Cabernet Franc gives elegance, floral and herbal notes to the usually plump and succulent Merlot.

As a single varietal, it allows terroir to speak through it, with a great diversity of flavours coaxed out depending on the varying climates and soil types it resides in. For example, in cooler climes, notes of pencil shavings, tomato leaf and violets abound. In warmer regions, expect the tell-tale pyrazine aroma of cayenne, mixed with blackberries and cocoa.

Surprisingly, Italy is the second largest producer of Cabernet Franc. With swathes of vineyards devoted to the grape in Friuli-Venezia Giulia, it’s renown comes from Tuscany, acting as the base component for many ‘Super Tuscans’. Although they are declassified to IGT status, many of these wines are popular worldwide and command premium prices. 

However, it is in its DNA where we find Cabernet Franc’s ubiquity. Turns out, it is the progenitor of three Bordeaux grapes: the well-loved international variety, Cabernet Sauvignon; the popular and friendly Merlot; and the flagship grape of Chile, Carmenere. 

Although Cabernet Franc may not always be the star of the show (except of course, as ‘Breton’ in the Loire Valley), its influence is felt through the lineage of these widely recognized and distinctive varieties.

Born and bred Tasmanian, our TAS Committee member, Michael, is a much respected and familiar figure in the local dining scene.

His experiences encompass front-of-house operations and wine wholesales.  As a certified sommelier, Michael started out at The Source in MONA, and then at Me Wah in Hobart.  His career also took him to work in the Melbourne dining scene.

Returning the Tasmania, Michael pivoted to the wholesale and distribution sector, working for trusted companies such as Negotiants Australia and Cellarhand Wine Distribution.  Here, he built his business acumen and expanded his network. 

In the end, Michael’s love and passion for hospitality has put him firmly back into front-of-house.  He is currently the Hotel Sommelier for The Tasman @thetasmanhobart, and the Assistant Restaurant Manager for their in-house restaurant, Peppina @peppinarestaurant.
