Sommeliers Australia members are invited to join our highly regarded COGS Managers (some may call them COGS Manipulators) David Murphy, Matt Dunne and Alex Kirkwood, and get an insight into how to make a beverage programme more profitable.

The session will cover everything from creating an interesting and profitable by-the-glass programme, costing a wine match, building a profitable cocktail list, beer COGS, looking at an overall beverage programme, and how to achieve your goals while ensuring value, originality, and integrity are not compromised.
