Ten Minutes by Tractor is one of Australia’s leading producers of Pinot Noir and Chardonnay based on the Mornington Peninsula. In 2006, we opened our award winning restaurant and cellar door in Main Ridge – home to our three original home vineyards.

Over the past 25 years, we have worked incredibly hard to develop our vineyards, winery and restaurant and have been very fortunate to bring together talented people from Australia and across the world, who share our passion and love for what we do.

 

About the Restaurant

Ten Minutes by Tractor is a two-hatted restaurant located in the beautiful hinterland of the Mornington Peninsula, an hour south of Melbourne.

The restaurant reflects our winemaking philosophy: creativity, attention to detail, shared experience, and the showcasing of quality produce from both locally and nationally.

Our wine list features over 1000 references and has been hailed as “one of the best in the country”. The wines selected for the list are internationally recognised for their quality and sense of place with a regional focus on Burgundy, helping to contextualise the peninsula and Ten Minutes by Tractor’s place within the wine world. The restaurant’s wine list has recently been awarded:

  • 2021 Wine List of the Year and entered into Hall of Fame 2022
  • 2022 Wine List of the Year – Best List of Wines by the Glass
  • 2022 The Age Good Food Guide Wine List of the Year

 

The Role

The Junior Sommelier will be responsible for supporting day-to-day wine, beverage and food service for the restaurant, ensuring we consistently deliver an exceptional experience to the highest standards. This role is perfectly suited for a seasoned section waiter or junior sommelier looking to further define their skills within the industry and learn from our team.

The role will include:

  • primarily shifts as section waiter during training
  • shadowing sommeliers and learning our sequence of service
  • gaining an in-depth understanding of Ten Minutes by Tractor wines
  • assisting the sommelier team in maintaining the wine list and cellar maintenance
  • attend tastings with our suppliers
  • assisting with stock-take and invoice entry into POS
  • helping to develop the wine knowledge in the front of house team

 

The Candidate

You will be an experienced and ambitious hospitality professional, ready for the next step in their career; passionate about your own education, enthusiastic about fine-dining, and thrive in sharing knowledge and engaging with guests. You will seek to exemplify a personable and guest focused attention to detail whilst providing articulate recommendations.

You will have a strong understanding of service principals and confidence in your ability to run a section.

You are collaborative, enjoy working with others and sharing ideas to further progress our overall service offering to guests delivering an exceptional experience and the highest standards of service.

Skills and experience

  • At least two years restaurant experience essential, ideally in a fine-dining environment
  • Exceptional service skills and clear, confident communication
  • Professionalism, punctual and well-presented
  • Ability to multi-task, work under pressure, and maintain strong work ethic
  • Regular fortnightly roster, weekends essential.
  • Genuine desire to evolve, adapt and progress your career
  • RSA, WSET 2 or equivalent minimum required, CMS Introductory highly regarded
