The focus on a venue’s underlying Cost of Goods Sold (COGS) and profitability have never been more important.

Join our highly regarded NSW Committee members/COGS Managers (some may call them COGS Manipulators) David Murphy (One Penny Red), Matt Dunne (Joval Wine Group) and special guest Emma Farrelly (State Buildings, WA), as they share insights into how to make a beverage programme more profitable.

The session will cover everything from creating an interesting and profitable by-the-glass programme, business specific COGS and key formulas, building supplier relationships, to how to achieve your goals while ensuring value, originality and integrity are not compromised.

Plus! Attendees will have their palates put to the test when faced with having to taste and position two wine samples blind that will be shipped to them ahead of the event (cost is included in the ticket price).
