DESCRIPTION:** Event postponed due to NSW Government COVID restrictions **\nWant to raise the bar on your understanding of spirits\, classic cocktails and bar-related COGS? \nJoin Sommeliers Australia’s Ben Moechtar (The Certified Sommelier) and two wizards of the bar world\, Charles Casben (Moya’s Juniper Lounge) and Evan Brown (Pier One)\, as they walk through the basics of spirits distillation\, tasting spirits\, creating classic cocktails (with a focus on CMS and international sommelier competition standards) and the how-to of managing costs to create a profitable bar programme. \nThe session will cover: \n\nhow spirits are made and the differences between the major categories\,\ndiscussion and tasting of a selection of boutique Australian spirits and liqueurs\,\nhow to cost spirits and cocktails\, mark-ups/margins\, etc\,\nthe basics of cocktail making\, with a focus on gin\, vodka\, tequila\, sparkling wine\, rum\, brandy\, whisk(e)y based drinks\, and\ntasting and assessment of spirits and cocktails.\n\n\nAbout our guests… \nCharles Casben\, Moya’s Juniper Lounge\nCharles started bartending at the turn of the century while studying physics at Sydney University. After several years of competition\, academia lost and hospitality was victorious. Having worked at various cocktail bars around Sydney he went on to study wine and passed the Certified CMS exams in 2011 while working at Christine Manfield’s Universal Restaurant in Darlinghurst. Wanting to get back behind a cocktail shaker\, Charles opened Moya’s Juniper Lounge in 2016\, an old-world cocktail bar focussing on gin classics where he resides to this day.\n \nEvan Brown\, The Fresh Collective – Pier One\nA professional bartender with years of cocktail competition experience\, Evan has developed a format for cocktail programmes that are simple to teach and aim to achieve consistency\, speed\, and showmanship.
